Cranberry Bread


I used to love how Mama always seemed to have cranberry bread around Christmas. I remember coming home from college and the house smelling like cranberry bread and having a snack as soon as I walked in the kitchen. For this reason, I always make it a point to bake some. This year, I decided to double the recipe because I couldn't remember how much it made and I didn't feel like I would be able to do it twice, if necessary.

First of all, I used the biggest bowl I had and it was almost filled to the brim. Then, I read the recipe and added the baking powder. When I looked back at the recipe, I saw the words "baking soda" and instantly thought I had added the wrong ingredient. I fished it all out (along with some sugar) and added that same amount in "soda." Then I looked back at the recipe and realized it called for both soda and powder and I had added WAY too much soda. I had also run out of baking powder. Lucy should not cook when she is pregnant!

I did finally get it all together, though, and I love that my house now has that smell. But... note to self for next year. Doubling the recipe gives you 12 mini-loaves and 2 regular size loaves. Anyone want cranberry bread?

I'm ashamed to admit how many times I've done something like that when I'm not even pregnant! I love cranberry bread too. Cranberry ANYTHING for that matter.

Yummy--yes, bring some Sunday if you still have it around (do NOT make more). I always mix up baking powder and soda, too. Many times I have done it WITHOUT being pregnant.
